Chia Pudding
Breakfast or dessert, chia pudding should and will be on the top of your favorites list.
Best part? It only takes 5 minutes (or less on a good day) to make it.
Tailor it to your liking by using your favorite type of milk- almond, coconut, or soy- and top it with fresh berries, crushed nuts, and whatever else you want.
I have a base recipe and three variations on it below, but feel fee to mix and match them.
Ingredients
Sweetener of choice (honey, maple syrup, stevia, etc.)
Instructions
-
In a bowl or jar, mix together the chia seeds with the yogurt, vanilla, and sweetener.
-
Give the pudding a good stir. Break up any clumps that may form.
-
Turn the heat off and pour the milk mixture over the pan. Mix vigorously and make sure the liquid is completely absorbed which will take about 3-4 minutes.
-
Cover the bowl or jar and pop it in the fridge. Let it sit for at least 3 hours, or even better, overnight. This will give the chia seeds enough time to absorb the liquid and expand, making the bowl a pudding-like consistency.
-
The next day or whenever you eat the pudding, top it with anything from fresh berries and chopped nuts to shredded coconut and nut butter.
