Chia Pudding

Breakfast or dessert, chia pudding should and will be on the top of your favorites list.

Best part? It only takes 5 minutes (or less on a good day) to make it.

Tailor it to your liking by using your favorite type of milk- almond, coconut, or soy- and top it with fresh berries, crushed nuts, and whatever else you want.

I have a base recipe and three variations on it below, but feel fee to mix and match them.

Ingredients

Sweetener of choice (honey, maple syrup, stevia, etc.)

Instructions

  1. In a bowl or jar, mix together the chia seeds with the yogurt, vanilla, and sweetener.

  2. Give the pudding a good stir. Break up any clumps that may form.

  3. Turn the heat off and pour the milk mixture over the pan. Mix vigorously and make sure the liquid is completely absorbed which will take about 3-4 minutes.

  4. Cover the bowl or jar and pop it in the fridge. Let it sit for at least 3 hours, or even better, overnight. This will give the chia seeds enough time to absorb the liquid and expand, making the bowl a pudding-like consistency.

  5. The next day or whenever you eat the pudding, top it with anything from fresh berries and chopped nuts to shredded coconut and nut butter.

OPTIONS

Very Berry-- Add these in to the mixture before refrigerating-- Frozen berries of your choice (I do wild blueberries), Cinnamon, Chopped pecans, Chopped walnuts, Flax seeds, Hemp seeds, Any other nut or seed you want

Apple Pie-- Add these in to the mixture before refrigerating-- 1 chopped apple, A dash of cinnamon, Chopped walnuts

Chocolate-- If you’re a fan of chocolate, this one is perfect for you! Add these in to the mixture before refrigerating-- 1 tbsp unsweetened cocoa powder, Chopped walnuts
