Cottage Cheese Avocado Cashew Pasta Sauce

High protein pasta?? Yes please, I’ll take one for now and one to go. And a few more for the rest of the week, maybe the year. I’ve gotten tired of boring marinara sauce and am honestly not the biggest fan of it. Who knew you could sneak in cottage cheese in almost everything? This is one of my favorite meals to make and of course another weekly staple. Pasta almost never keeps me full, and I know that’s because plain pasta with a store-bought sauce does not hit all the food groups to make it a satisfying and balanced meal. This sauce is creamy and rich, which makes the fact that it has both protein AND fat even more enjoyable. Eating healthy is such a brainless thing if the food already tastes good.

Ingredients :

  • 1/2 cup cottage cheese

  • 1/2 of an avocado

  • 1/2 lemon

  • 1/4 cup cashews

  • 1 tablespoon nutritional yeast (optional but highly recommend)

  • salt and black pepper

Directions:

  1. Blend the cottage cheese, avocado, squeezed lemon, cashews, salt, and black pepper in a food processor.

  1. Add it to the pasta, or any other carb of choice.

  1. Enjoy!
cook pasta to serve with (to make it a balanced meal, I would pair this with lentil or chickpea pasta
